 When it comes to summer, I always think of ripe peaches. It is totally a waste to just eat these sweet babies in raw. So today I will give you a delicious and easy baking recipe to treat yourself. Also it is one of my tasty Cast iron DESSERT recipes. No dessert can be a more perfect in summer time than a pan of best ever peach cobbler. It feels fantastic when savor the flavors of summer with sliced fresh peaches cookingand lemon juice. The tang of the lemon juice paired with the sweetness of the peaches is perfectly balancedwith the crisp topping. And want to make dessert even better? Why not put a dollop of cold vanilla ice cream on the top. You can also make this sweet dessert in the morning since it is easy to prepare and only cost 35 minutes. And you can make a cup of coffee when it still baking in oven. So here are the steps to make easy peach cobbler skillet recipe.

 

EASY PEACH COBBLER SKILLET

INGREDIENTS:

1/2 teaspoon cinnamon

1 1/2 teaspoons vanilla extract

2 teaspoons cornstarch

1 1/2 tablespoons lemon juice

1/4 cup brown sugar

1/4 cup white sugar

10-12 ripe peaches (pit removed, peeled and sliced)

Crumb Topping

1 1/4 cups yellow cake mix

6 tablespoon chilled butter

1/4 cup brown sugar

2 tablespoons sugar

1/2 teaspoon salt

3/4 teaspoon cinnamon

1 teaspoon baking powder

DIRECTIONS:

  1. Preheat oven to 425 . Add sliced peaches, lemon juice, cornstarch, brown sugar, white sugar, vanilla and cinnamon in a large bowl. Toss to combine and thenpour this peach mixture into the Cast iron skillet. Bake in oven for 10 minutes.
  2. While peaches are baking make crumb topping, put in 2 tablespoons sugar and 3/4 teaspoon cinnamon in a small mixing bowl. Stir to combine and set aside.
  3. In a medium mixing bowl, combine the remaining crumb topping ingredients, the yellow cake mix, brown sugar, salt and baking powder. Stir until combined and then add butter.Cut butter into the mixture by using a pastry blenderuntil it resembles coarse crumbs.
  4. Once the peaches are done perfectly, removefrom oven and sprinkle the cinnamon and sugar. Then add the crumb topping to cover the peaches completely. Set back the oven and bake until crumb topping is turning into a nice golden brown. (for about 25 minutes)
  5. Serve with vanilla ice cream or whipped toppingimmediately.
