SKILLET LEMON GARLIC ROASTED CHICKEN

Super tender and juicy chicken may be most peoples favorite. Nowadays I would like to order Buttermilk Crispy Chicken in McDonalds. But I have spent too much money on buying this snake, therefore gaining some weight. So why not make chicken in our own kitchen? It is more fun and healthier than just ordering chicken in the fast food restaurant. But I didnt know how to handle a whole chicken? I asked friends for help and luckily I got a fabulous recipe from one of the specialist! It is simple to make but delicious! Here I would like to introduce the very easy Cast iron CHICKEN recipes to you. It is skillet lemon garlic roasted chicken. The chicken is incredible tender and moist. However, all the ingredients you need are 4 pound chicken, lemon, garlic, pepper, butter and kosher salt. Not only the ingredients can be found in everyones kitchen, also the cooking steps are not difficult. Even green hand can make it. So here is the recipe.

LEMON GARLIC ROAST CHICKEN BEST DISH

INGREDIENTS:

  1. A4pound whole chicken (patted dry)
  2. Kosher salt,
  3. Freshly ground pepper
  4. 1 lemon(halved crosswise and seeds removed)
  5. 1 head of garlic(no need to remove peel and halved crosswise)
  6. 1/4cup unsalted butter(melted or olive oil is OK)

DIRECTIONS:

    1. Preheat the oven to 425and then put a rack in the center of it. 
    2. Put the chicken on the cutting board and make the chicken breast face up and the legs point to you. Then use a knife to slice through loose area of skin draped between breast and legs about 3 inches length. Continue cutting down until hitting the joint that connects the thigh to the body.  Exposing the leg joint.
    3. Season every single surface of chicken with lots of kosher salt and chopped freshly ground pepper, including skin along backbone, cavity, under wings, and also the inside part of the leg just exposed.
    4. Transfer chicken breast side up to a largeCast iron skillet. Put the halved lemon and garlic cut sides down in skillet around the seasoned chicken. Drizzle chicken with melt butter and transfer the skillet to the preheated oven. Roast in center of oven for 45 minutes or until chicken is turning into a beautiful golden brown color and cooked through. Checking the chicken if it is cooked through.
    5. Let chicken rest in skillet at least 15 minutes before carving. Transfer chicken to a platter. Better top with pan juices and serve with roasted lemon and garlic alongside. Enjoy it.

I suggest you roast some sweet potatoes when you cook the chicken in the oven. Because roasting sweet potatoes must be the best garnish of the simple chicken cooking. As you can see, exposing the leg joint makes it easy to tell if chicken is cooked and helps hot air to circulate to thickest part of chicken. After roasting the chicken for 45 minutes, you have to check if it cooked well and it is the most exciting time during you make this dish. To check, you need to remove the cast iron skillet from oven and then poke a knife into leg joints piercing the meat. If juices run clear, chicken is done. If you see a rosy pink color, it needs more time. Continue to roast and check every 5 minutes until juices run clear.

This must be the easiest chicken recipe for you guys but the flavor is not easy. The chicken is super tender and juicy. Also the entire bird was flavorful. All you need are only 6 ingredients including the kosher salt and pepper!
