If there is one thing that I can’t live without, it’s probably shrimp. I love shrimp, and if there is only one food that I can choose, it’s going to be shrimp. And here my cast iron shrimp recipe is definitely the one tossed by these two flavorful babies----lemon and garlic. Lemon and garlic are simple, yet ideal ingredients for making flavorful, savory and fresh dishes. They are my two favorite flavors to season seafood. I always have both in my kitchen. Olive oil is also a great substitute to butter which is a healthier alternative to cook shrimp. You won’t even believe how quickly this meal comes together. I have to say that all the ingredients can be found in your kitchen. If you don’t have shrimp, just go and get some! This perfect lemon garlic shrimp pairs well with rice, veggies and even a fresh green salad. Try this cast iron skillet recipeand you will have dinner on the table in less than 30 minutes!
LEMON GARLIC SHRIMP
INGREDIENTS:
1 pound peeled and deveined jumbo shrimp
5 garlic cloves, minced
2 tablespoons freshly squeezed lemon juice (from one medium lemon)
3 tablespoons chopped fresh parsley
1 tablespoon olive oil
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
DIRECTIONS:
- In a large bowl, add the shrimp, salt and pepper. Toss to coat and set aside.
- Grease a large nonstick skillet with 1 teaspoon olive oil and heat up over medium heat. Add garlic in the pan and cook for 30 seconds. Then add shrimp to the pan in a single layer. Cook each side undisturbed for about 2 minutes.
- Add the lemon juice and cook for about 2 minutes until the shrimp is cooked throughout. Add the parsley, stir to combine well. Serve immediately.
