Delicious Skillet Chicken Tortilla Pie

What if I put the seasoned well chicken breast into the preheat oven? No, cooking shouldnt be like that. If you want to make the best chicken breast in the world, if you want to make everyone surprise, you need skills. But what if I dont have enough skills or even I never go into the kitchen. Today I want to share a delicious Cast iron CHICKEN recipes with you. It is OK even you never cook anything. I promise if you use my recipe, you will be a chef of cooking chicken breast. Here is the delicious skillet chicken tortilla pie recipe. It is easy since the ingredients are easy to find in your kitchen and these steps are simple.

 

Cast Iron deliCIOUS SKILLET CHICHEN TORTILLA PIE

 

INGREDIENTS:

Sauce:

1 yellow onion (roughly chopped)

2 teaspoons cumin

1 teaspoon oregano

3 teaspoons chili powder

1.5 teaspoons salt

2 tablespoons olive oil

4 cloves garlic, roughly chopped

1.5 cups chicken broth

2 28-ounce cans diced tomatoes

Chicken Tortilla Pie:

30 small corn tortillas

2 lbs. boneless skinless chicken breasts

4 cups shredded Mozzarella cheese

2 tablespoons taco seasoning

Cilantro and Cotija cheese

DIRECTIONS:

    1. Heat olive oil in a largeCast iron skilletand then add chopped onions and saute for about 8 minutes. Reduce heat and add the chili powder, cumin, oregano, salt and garlic and stir fry for about 3 minutes or until the mixture is very fragrant. Be sure not to burn the garlic. Next, add the chicken broth and tomatoes. Let it simmer for about 6 minutes until the sauce turns into a very deep red color. Transfer to a blender, puree and then set aside. Taste and you can adjust saltiness.
    2. Coat the chicken breasts with the seasoning. Heat the pan over medium low heat with a little oil and add the seasoned chicken. Cook for a few minutes on each side until nicely browned. Cover with sauce we made before and simmer for another 8 minutes to make sure the chicken finishes cooking gently in the sauce. Remove chicken from sauce and shred with two forks. Set aside.
    3. Preheat the oven to 375. Dip five tortillas in the warm sauce and layer in the bottom of a 9-inchCast iron skillet. Put in a scoop of chicken, a handful of cheese and about 3/4 cup sauce. Repeat this step. In the end, add one more layer of tortillas, a scoop of sauce and cheese.
    4. Spray nonstick oil to the foil for preventing it from sticking on the cheese and use it cover the skillet. And then put it in the oven and bake for about 25 minutes or until the sauce is bubbly and cheese melted well enough.
    5. Top with cilantro and Cotija. Let it cook for about 5 minutes. Then slice and serve.
