PERFECT STEAK WITH GARLIC BUTTER

 Perfect steak with garlic butter is an amazing cast iron skillet recipe. Juicy, crisp steak cooked just the way you want it, topped with a garlic compound butter! Nothing beats the sight of a melting dollop of garlic butter slowly disappearing over a perfectly cooked steak! This cast iron steak recipecouldn't be more simple, and itis full of flavor. The butter makes this steak melt in your mouth wonderful. I would say the key is very hot oil, the steak browns beautifully! I did add more garlic and used less salt to adjust this cast iron cookingin order to suit my taste. A salad or/and potato would make this meal perfectly, you can match with Flan for dessert!

PERFECT STEAK WITH GARLIC BUTTER

INGREDIENTS:

4 (12-ounce) rib-eye steaks (1 1/4-inch-thick, at room temperature)

4 tablespoons olive oil

Kosher salt and freshly ground black pepper

Garlic compound butter

1/2 cup unsalted butter (at room temperature)

1/4 cup chopped fresh parsley leaves

1 teaspoon thyme, chopped

1 teaspoon rosemary, chopped

1 teaspoon basil, chopped

4 cloves garlic, minced

1/2 teaspoon kosher salt

1/4 teaspoon ground black pepper

Zest of 1 lemon

Pinch of cayenne pepper

DIRECTIONS:

  1. To make the garlic compound butter, in a medium bowl,combinebutter, parsley, garlic, lemon zest, thyme, rosemary, basil, salt, pepper and cayenne pepper and transfer the mixture to parchment paper, shape into a log. Roll in parchment to 1 1/2 inches in diameter, twisting the ends to close. Store in refrigeratorfor up to 1 week until ready to use.
  2. Preheat oven to broil. Place a cast ironskillet in the oven.Using paper towels, pat both sides of the steak dry. Drizzling olive oil on the steak and season with salt and pepper. Remove skillet from the oven and heat over medium-high heat.
  3. Place the steak in the center of the pan and cook for 1 minutes until a dark crust has formed. Using tongs, flip, and cook for an additional 60 seconds.
  4. Transfer theskillet into the oven and cook until desired doneness is reached, about 4-5 minutes for medium-rare, flipping once.
  5. Remove the pan from the oven and letit cool for 5 minutes.Serve immediately with garlic compound butter.

You need to wait with patience since the steak needs to rest for about 5 minutes before you serve it. Waiting several minutes just because we want it to be as juicy as possible. If your garlic has a green sprout growing in the center, be sure to remove it for it will impart a bitter flavor to the final dish.
