I have told you guys Im a huge fan of blueberry. Does anyone else find it hard to walk into a Grocery Store during the summertime and ignore the basket of blackberries crying out to you? This cute berry is not only tasty, but very healthy for our eyes. Also blueberry dessert always catches my attention right off the bat, even more so when it's served in a little ramekin. Here I would like share with you one of my favorite Cast iron DESSERT recipes.it is yumy blueberry Bourbon cobbler skillet recipe. Blueberry plays the main actor in this simple one pan food. I would like to say this one pan food must be the one youve wait so long time. It looks unbelievable and tastes incredible. This yumy blueberry Bourbon Cobbler is light on the booze and heavy on the flavor. The biscuit topping is super soft, and a little bourbon goes a long way. Cant wait to know how to make this fantastic dish? Here are the steps of the amazing skillet recipe.

skillet BLUEBERRY BOURBON COBBLER RECIPE

INGREDIENTS:

Sweet Biscuit Topping

2 sticks unsalted butter (cold and cubed)

2½ cups self-rising flour

 cup granulated sugar

1 cup buttermilk

1 teaspoon vanilla extract

Pinch of kosher salt

Cobbler

  1. Preheat your oven to 350℉, cover the Cast iron skillet evenly with a teaspoon olive oil. Set aside.
  2. Biscuit dough: Putthe self-rising flour, granulated sugar, salt and butter in the bowl of the food processor which attached with dough blade. Processing until the mixture resemble coarse crumbs. When making the mixture, pour in the buttermilk and vanilla extract. Continue processing until the dough groups together and forms a ball around the blade. Set aside.
  3. Gentlystir together the blueberries, flour, vanilla extract, bourbon and sugar in a large bowl and then make them combine. Pour the blueberries into the prepared Cast iron skillet.
  4. Dollop the biscuit dough on top of the panand place it in the preheated oven. Bake the cobbler until the biscuits are turn into a golden brown and the blueberries are bubbly. (for 40 minutes)
  5. Remove fromthe oven and let it cool for 5 minutes. Serve it with additional blueberries, sliced almonds, and vanilla ice cream.

 

DIRECTIONS:

  1. Grease a large cast-iron skillet evenly and heat up over medium, then add bacon slices and cook for about 10 minutes until crispy. Turn the slicesand be sure not overcooked. Transfer to a plate which lined with paper towels and kept reserving drippings in skillet.
  2. Put potatoes, onion and bell pepper into reserved drippings and spread in an even layer, then cover and cook for about 5 minutes over medium heat until potatoes soften. Uncover and cook for another 5 minutes until potatoes are just browned and beginning to crisp. Be sure not to stir while crisping. Season the browned potatoes with garlic, salt and pepper.
  3. Stir dish per each 2-minute interval in 6 times until potatoes are browned and crisp.
  4. Crumble bacon and add bacon and spinach to the pan. Then transfer it from heat and stir a few minutes until spinach wilts. Serve with hot sauce.
