Not only it gives the chicken a faint apple flavor, but the acidity in the cider enhances the flavor of the chicken in much the same way that lemon does. And here I would like to give you one of the best Cast iron chicken recipes. It is wonderful apple cider baked chicken and it is a healthy but easy to make one pan food. The taste is fantastic and also can be made in 30 minutes. If you dont want to bother yourself but really want to satisfy your appetite, you can try this wonderful apple cider baked chicken recipe. Wonderful Apple Cider Baked Chicken Skillet

INGREDIENTS:

1 1/2 pounds chicken thighs (boneless, skinless)

3 medium sweet apples (cored and cut into 1/2-inch slices)

1/2 teaspoon freshly ground black pepper

1/2 cup fresh apple cider

4 teaspoons extra-virgin olive oil

2 teaspoons Dijon mustard

2 teaspoons chopped fresh rosemary

1 teaspoon kosher salt

DIRECTIONS:

    1. Sprinkle 1/2 teaspoon kosher salt and 1/4 teaspoon pepper evenly on the top of the chicken.  Heat 2 teaspoons of the olive oil in a largeCast iron skilletover medium high. Once the oil is hot and shimmering, add the chicken to the pan, top-side down. Let cook for 4 minutes, then flip and continue cooking until the meat is cooked through and reaches an internal temperature of 160 degrees and cook about 3 minutes. Remove the chicken to a plate and cover with foil to keep warm.
    2. In a small bowl, stir together the apple cider and mustard. Use a paper towel and carefully wipe theCast iron skilletclean. Heat the remaining olive oil in the pan over medium high. Put in the apple slices, 1/4 teaspoon pepper, remaining 1/2 teaspoon salt and rosemary. Cook for about 5 minutes or until the apples are lightly tender and begin to turn golden. Transfer the chicken cooked before to the pan. Then pour the cider mixture over the top and cook for 5 minutes. When the liquid is reduced by half, remove the pan from the heat and cool for few minutes.
    3. Serve with additional chopped rosemary.

To give some fresh flavor to the chicken, I use rosemary in this recipe. You can also swap chicken breasts for the thighs. But I still insist you choose thighs for cooking to give this recipe the best flavor. If you use chicken breasts, be sure to watch the cooking time.
